Vegan Sadz in a Pan
The Sadz pan can be used to cook almost anything, but this time – a delicious and warming vegetable-only dish. This recipe is perfect for vegans and anyone looking for something light, colorful and hearty.
Ingredients
- 1–2 of each: zucchini, eggplant, potato, tomato, carrot, bell pepper, onion
- Fresh and marinated mushrooms
- Canned corn
- Olive oil
- Salt
- Fresh dill and parsley
- Lemon
Preparation
- Chop all vegetables and fresh mushrooms.
- Add salt, drizzle with olive oil, and let sit for ~20 minutes to soften.
- Layer tomato slices at the bottom of the pan, followed by vegetables, corn, and marinated mushrooms.
- Add 2 tablespoons of marinade liquid.
- Roast over a campfire or bake in the oven – best over coals, as the Sadz pan has its own legs and doesn’t need a separate stand.
Serving
Garnish with fresh herbs and lemon slices – simple, healthy, and delicious!
Variations
For extra zest, add pickles or roasted chili peppers – peel the skin and add them at the end of cooking.
