To achieve the best results the meat must be grilled in high temperature. To retain the juiciness of meat, at first it must be cooked on a very hot flame for a short period of time, for the meat to be covered in a golden brown crust from both sides. Afterwards it will be enough to grill each side of the meat on the grill just once – if you move the meat too much, it will become drier and loose its beautiful appearance. If the coal becomes too hot, you must dampen it: you can use water or any other edible liquid to do this. To gain an even tastier and more interesting flavour, you can use wine or beer to dampen the heat.
Before each use, we recommend brushing your cooking grates clean with a stainless steel bristle brush. It is not uncommon for food to stick more to new cooking grates. As you continue to use and clean your grates you will break them by reducing the amount of sticking.
If you haven't already, invest in a good grill brush!
From time to time, you may notice rust spots forming on your grates. This is completely normal and can usually be fixed by washing them with hot soapy water.
Clean your grates before each use! If you’re using a marinade, try to get as much liquid off as possible before placing the food on the grill and if using a BBQ sauce, wait until the last 5-10 minutes of grilling before applying it to your food. Using excessive marinade and applying BBQ sauce too early in the grilling process can result in the sugar burning causing a dark color and sometimes an off-putting taste. All that extra liquid is also going to mean that you’ll have to spend more time cleaning your grill.

Oiling your grill grate helps prevent food from sticking when cooking. To do this, dip a wadded paper towel in a little oil and, using tongs, wipe the oil evenly over the grate. Be careful not to use too much oil, because that's a sure fire way to start a good flare-up—a little goes a long way here."
If you cooking something that's been oiled itself, skip this step, because it's somewhat redundant. If you're unsure, it's always best to oil 'er up.
